Vegetarian Mexican Air Fryer Stuffed Poblano Pepper Recipe
My family loves all kinds of peppers. And we use Poblano Peppers quite often in our recipes like this Instant Pot Poblano Corn Cheddar Soup.
Since I had few Poblano peppers at home along with some leftover Arroz Rojo (Mexican Red Rice), this recipe was a breeze.
All you need is just handful ingredients that are already in your pantry and this recipe is all yours. It is that simple.

What are Poblano Pepper and how hot are these?

These peppers are mildly hot and are from the state of Puebla, Mexico. When dried, these are known as ancho or chile ancho.
Now different color Poblano might vary in their heat quotient. The green poblano are the mildest.
You can remove the seeds and membranes from the insides to cut down the heat further.

Can I make it in Air Fryer Lid?
Yes you can absolutely make it in Air fryer lid. Follow the same temperature and time. These might get done faster in lid though since these are closer to the cooking source, therefore keep an eye.

This is such a simple recipe and does not need much prep. Therefore I would advise to make it right before you eat. Although you can prepare the mixture in advance and keep it ready. So right before eating, just stuff the peppers and air-fry.

It is practically vegan if you kick that cheese and sour cream out. Use the substitute for those 2 ingredients and it is all vegan.
How to store the leftovers?
Cool these down to room temperature and store in air-tight container. Refrigerate.

Microwave it till warm. Or microwave for 1 minute till it is slightly warm. Then air fry it at 350 for 2-3 minutes.
What can I use if I can not find Poblano Peppers?
If poblano peppers are not available, then you can use Anaheim peppers or Cubanelle peppers.
Do I have to peel Poblano Peppers before stuffing?
Typically it is recommended in many recipes. I did not do it for this recipe. Although I did air fry the poblano peppers a bit before stuffing. That helped in softening the skin of the peppers.
Can you use Poblano Peppers without roasting?
Yes you can. If you are okay with that bit of crunch of the peppers then use it without roasting. These are perfectly ok to be used as is.
Can I make it in the oven?
Yes you can. Roast these a bit on the gas top. Stuff these and bake at the same temperature. Oven might take longer to bake these. Bake on medium rack.
Gas Top Stuffed Peppers
Use heavy bottom pan for gas top recipe. Or the best would be to use cast iron pan. Season it well with oil. Char the peppers a bit on open gas flame. Remove the peppers, fill with stuffing. Place on the hot pan. Cook on medium to low heat, covered for few minutes till cheese is melted. Then remove the lid and cook a bit more.
How to serve these peppers?
You can serve these on top of some salsa bed or enchilada sauce bed. Spread some sauce on the serving plate. Place the warm air fried peppers on top. Sprinkle some more cheese, some sour cream and some hot taco sauce. There it is done.
Air Fryer Stuffed Mexican Peppers Recipe
- Wash and dry the peppers. Slit them into 2 laterally. Remove seeds and membranes from inside. Discard those. Rub or spray a little oil on the skin of the peppers. Air fry these at 390*F for about 7 minutes. This will soften their skin a bit. Ready to use. You can totally skip this part if you are ok with the crunchy pepper.
- Prepare the stuffing by dumping all the stuffing ingredients together – cooked rice, Canned Black Beans, thawed corn, Medium Chunky Salsa, cheese & Taco Seasoning. Mix it all. Set aside.
- Take one half of the poblano pepper. Fill it up with the stuffing. Finish all the pepper halves likewise.
- Place Air fryer parchment paper inside the AIR FRYER. Air fry 3 halves at a time at 350*F for 7-8 minutes till cheese melts.
- Take them out and air fry the rest. Serve these on top of either salsa or enchilada sauce at the bottom. Garnish with some sour cream and hot taco sauce.

Air Fryer Stuffed Poblano Pepper Recipe with Mexican Filling

Ingredients
- 3 Poblano Peppers (green) see notes for substitute
- 1/2 tbsp Cooking Oil
- 1/2 cup Cooked Rice I used leftover Mexican Arroz rojo/red rice. You can use cooked white rice or cilantro rice.
- 1/2 cup Canned Black Beans drained and washed
- 1/2 cup Frozen Corn Kernels thawed
- 1/2 cup Chunky Salsa, medium hot
- 1/2 cup Taco Cheese, shredded
- 1 tbsp Taco seasoning use gluten-free if you are allergic to gluten
Instructions
Gather all the ingredients. Read the recipe before starting. Always read the NOTES for more options and tips.
Prepare the Poblano Peppers

- Place Air fryer parchment paper inside the AIR FRYER. Air fry 3-4 halves at a time at 350*F for 7-8 minutes. Keep a close eye before it gets too dry. If you have a larger air fryer, you might be able to air fry these all together.
- Take them out and air fry the rest. These are done.
Serving Suggestion
- Serve these on top of either salsa or enchilada sauce at the bottom. Garnish with some sour cream and hot taco sauce on top.
