Now don’t tell me that it is too late to post about corn. Hey, the last crop is still in the market. And although FALL SEASON has started officially, SUMMER is still hanging on. So why not?
Moreover, we have a CORN CRAZY family here, especially my husband. Amit can feast over 100s of corn and will still have an appetite for more. That is serious business. Nobody can or should I say, nobody should come in between him and his corn.
And this guy loves to grill his corn. On the other side, my girls crave for BUTTERED CORN for a good change. Therefore, while he grills his.. I Instant Pot few corns for my kiddos. And they share some of the steamed corn kernels with ZOEY, our 7 m.o CAVAPOO🐶. I must share her pictures sometime. She is the cutest.
So I leant the right technique to make PERFECT CORN ON THE COB in INSTANT POT. I will never boil it on the stove again.
Some Delicious Ways to Enjoy Corn on the Cob
- It is the perfect VEGETARIAN SIDE DISH. Serve it with your main meal. Or eat it for your snack.
- Butter it up plain and simple.
- Add flavored butter like garlic butter.
- Sprinkle it with Parmesan.
- I love to sprinkle Tajin (Mexican Seasoning) on it.
- Also another of my favorite way to eat it is with lemon, paprika and salt.

Now there is only one and only one ingredient for this recipe. And that is CORN itself. Get fresh husked or de-husked corn on the cob from the market and rule this recipe for a quick and hearty yum.

How else can I use Corn on the Cob?
If you make extra corn on the cob and do not want to eat it as is, then shell the steamed/boiled kernels off the cob and store to make these recipes –
- Corn Chowder
- Asian Sweet Corn Soup
- Chipotle style RICE BURRITO BOWL
- QUINOA BURRITO BOWL
- Shell and freeze for more recipes to be used in soups and salads
How to make Corn in IP?
You can make up to 6 regular size CORN ON THE COB in a 6 quart IP. That is what I did.
I have seen people making Corn in IP without husking it. But to be honest, I haven’t done that. So my recipe is for DE-HUSKED CORN.
- First of all, remove the husk and all the silk of the corn. Repeat with all the corns and set aside.
- Now place inner pot inside and then put the lower trivet inside.
- Add water and layer the corns in 2 rows, as shown in the picture above.
- Place the lid. Set the valve to SEALING and PRESSURE COOK. (complete recipe given in RECIPE CARD below)
- Follow QPR (quick pressure release).
- Then open the lid and take out the steamed corn.
- Finally SEASON IT to your liking and enjoy.

Equipment
- Inner Pot
- Lower Base Trivet
Ingredients
- 6 Corn On The Cob de-husked
- 1.5 cups Water
Topping/Seasoning Suggestions
- Butter
- Garlic Butter
- Parmesan & Garlic Salt
- Tajin
- Lemon, Paprika & Himalayan Salt
- If you are a vegan, then use coconut butter or olive oil
Instructions
- First of all, remove the husk and all the silk of the corn. Repeat with all the corns and set aside.
- Now place inner pot inside the Instant Pot and then put the lower trivet inside.
- Add 1&1/2 cups water and layer the corns in 2 rows, as shown in the picture above.
- Place the lid. Set the valve to SEALING. Now press PRESSURE COOK and set it for 2 minutes on HIGH.
- Once the timer goes off, follow QPR (quick pressure release).
- Then open the lid and take out the steamed corn.
- Finally SEASON IT to your liking and enjoy.

STORAGE
These are super easy to refrigerate. Bring them to the room temperature and refrigerate upto 1 week in an air tight container or a large ziplock.
